removing background from an images

Hi
Lost my adobe photo-shop CD and I can not find user manual for this GIMP! So dose any one know a few basics on how it works please

I want to; 1. remove the background behind a person in photo then 2. Grey scale or mono color the person and then 3. write text over them

But I do not know where the setting are Any help please?

You should go back and read the post on gimp-forum.net however from there:

Beginner type method for removing the Background. https://youtu.be/GzmpO2AoWXw

Greyscale is easy, In the menu Colours -> Desaturate and text is using the text tool, not difficult.
