What exactly are you looking for? The cursors are compiled into GIMP. What kind of data or information do you need and for what purpose?

For instance, the mouse cursor turns to a hand with the forefinger pointing upwards. I want to put this image in the Help, but I can't capture it and I can't find it among GIMP's files. Where this icon is?

That's a system cursor, it doesn't come with GIMP. These cursors can look rather different depending on what platform you are on and what cursor theme people are using. I don't know if it makes sense to include them in the user manual.
