One way is to start on command line using "LANG=en gimp" - that should work with MAC too. That should set the environment variable LANG to "en"

on Mac you need to change your systems-language. It's not possible to change the language only for gimp (like on windows)

As Martin said, please read the linked documentation. That's not a setting in the preferences but how you can call GIMP from the command line on unix like systems.

The instructions at the above link do NOT help -- one cannot find "Edit->Preferences->etc..." in a foreign script one cannot read.

I ran this from the command line (Terminal) and it worked:

LANG="en" ; export LANG ; /Applications/Gimp.app/Contents/MacOS/Gimp

Oddly enough, when I open Gimp with the program icon, it still defaults to Greek - even when I disable all non-English languages in the OS. I suppose I should launch it from a bash script instead specifying the locale as en_US ...

On Mac OS X the preferences are not in the Edit menu, but in the GIMP menu (the left-most menu item, right next to the Apple symbol in the global menu bar). It's the same menu where you can quit GIMP.
