Hi!. Are there plugins that allow you to adjust the dithering depth when converting to an indexed image like in Photoshop?

You could try

Convert to indexed first

There is a GEGL dither filter, bottom of the Color menu, that works on indexed images.

Thanks! I just tried it, but it has not depth adjusting.

You could try

Convert to indexed first
